Recipe: Smokey Bacon & Honey Muffins

Prize-winning cakes made with bacon you say? How ruddy marvellous! I’ve been working on this recipe for a little while, and testing it on all my friends.

Last weekend I made a batch with the delicious Willington Hall honey I brought home from Cheshire and entered them in the Wimblington & Stonea Horticultural Show.

The challenge was to create one’s own recipe using honey. It could be anything. Last year I came 2nd with my Honey and Lavender Cakes. This year my honey muffins came 1st. Muffin power!

They are dead simple to make, and pretty tasty too! I make muffin for you.

Ingredients:
250g self-raising flour
100g mature cheddar cheese (grated)
3-4 rashers of smoked streaky bacon
2 dessertspoons pure natural honey
250ml low fat natural yoghurt
3 tablespoons olive oil
1 large egg (preferably from a prize-winning chicken!)
A little butter for greasing the tin

Instructions:
Preheat the oven to 180 ºC
Grease 12 hole muffin tin with the butter
Chop the bacon into small pieces and fry gently
Put the flour in a bowl and add the cheese, bacon and honey
Put the yoghurt in a jug, add the egg and olive oil, stir
Add the yoghurt mixture to the flour mixture and blend together
Spoon equal amounts into the muffin tray
Bake for 20-25 minutes until golden brown

Then, the most important bit – tuck in!
